Sainte Eulalie, Minervois Rosé 2016
Minervois is one of our favorite appellations. Nestled in the hills of the northern Languedoc, just northeast of the medieval walled city of Carcassonne, it gets its name from the small town of Minerve that sits improbably on a 100 foot tall island in the middle of a gorge. There Isabelle and Laurent Causta create beautiful wines like this “Printemps d’Eulalie,” or “Spring of Eulalie.” This blend of Syrah and Cinsault is light in color but rich with strawberry, cranberry and raspberry flavors, with an herbal note to make it all more interesting.
